Wine Finings are used to speed up the rate at which a finished wine clears.

It has 2 active ingredients, Finings A is Kieselsol and Finings B is Chitosan.
It targets effective clearing of both wine and beer and also high alcohol products such as those produced using the Alcotec Turbo range of yeasts, very quickly. -
Bentonite

A type of clay which occurs naturally in Wyoming, bentonite is a 'mixed oxide of aluminium and silicon'.
If added at the start of fermentation it helps to drive off the carbon dioxide produced, ensuring a rapid and smooth fermentation.
It also fines the wine at the end and is especially effective at removing proteins, which can come either from the must or from the yeast.
Bentonite needs to be dispersed as a fine slurry before adding to the wine.
Suitable for vegetarians.

Gelatine

This Gelatine is in liquid form and can be used for clearing wine, beer, juices and liqueurs.
Gelatine, being positively charged, combines with negatively charged particles such as tannins and yeast.
It works quickest when used in conjunction with Kieselsol which, being negatively charged, combines with positively charged particles such as proteins.
These combined particles, now larger and heavier, settle to the bottom so that after a few days the clear wine can be racked from above.
Gelatine can also reduce astringency by removing tannins.
As gelatine is derived from animals it is not suitable for use by vegetarians.

This sachet of finings comes in a dried form sufficient to fine 5 gallons.
For 1 gallon use about half the sachet, and use it all in 5 gallons.
It needs to be thoroughly mixed into half a cupful of water for 1 minute and stood for 15 minutes before adding to the wine.
Its active ingredients are Silica Hydrogel and Natural Collagen. -
Kieselsol

This Kieselsol is in liquid form and can be used for clearing wine, beer, juices and liqueurs.
It is an aqueous solution of negatively charged, food grade colloidal silicic acid.
Kieselsol, being negatively charged, combines with positively charged particles such as proteins.
It works quickest when used in conjunction with Gelatine, which is positively charged and combines with negatively charged particles such as tannins and yeast.
These combined particles, now larger and heavier, settle to the bottom so that after a few days the clear wine can be racked from above.

Just add 1-2 ml of bottle A (Kieselsol) per gallon, stir well and leave for 30 minutes.
Then add 1-2 ml of bottle B (Gelatine) and again stir well. Leave to clear and then rack off the sediment, usually this will be within 72 hours.
These two fining agents are often supplied as part of wine kits, as make a quick and powerful combination. -

These excellent finings come in two sizes, 115ml & 250ml.
The smaller will fine approximately 8 gallons or 36 Litres, whereas the larger bottle is sufficient to clear up to 16 gallons or 73 Litres.
Pour half a pint of wine into a jug, add two capfuls of Vinclear per gallon of wine, mix well and add this to the bulk of the wine and stir well.
Suitable for pescatarians but not vegetarians.
Keep the wine in a cool place to clear.

Young's Wine Fining Sachets - Liquid

After wine has been stabilised and the dissolved gases removed by shaking or by using a degasser, add the contents of sachet A, stir gently and leave to stand for 1 hour.
Then add the contents of sachet B, stir gently, and leave the wine in a cool place to clear.
The active ingredients in this product are silicic acid (hydrated silica) and chitosan (produced from the shells of crustacea such as lobsters)
Contents 65 grams sufficient to clear 23 litres (5 gallons) of wine.
