These varieties, although high in alpha acids, have quite acceptable aroma properties. These can be used for boiling and late additions but are usually unsuitable for dry hopping.

Sorachi Ace

This high alpha hop was originally developed in Japan at Sapporo Breweries from a cross between Brewer's Gold and Saaz. It has a unique lemony aroma and a high alpha acid content.
It is used in a number of well known beers like Sapporo Lager, St Petersburg Imperial Stout and in one of the four single hop IPA's in Brewdog Brewery's unique 'IPA is Dead' range.
